Candida Diet Omelette (Green Pepper and Leek)

- 2-3 Eggs
- 1 Green Bell Pepper
- 1 Small Leek
- 1 pinch Salt & Black Pepper
- 1 pinch Turmeric
- 1 handful Pine Kernels
- 1 handful Fresh Basil or Spinach Leaves
- Can be eaten cold as a snack. Best taken out of the fridge some time before serving in that case to bring the flavours out.
- Best to make double the amount for the next day – Serve with a mixed salad for lunch.
|Chop the leek and bell pepper into small chunks and lightly fry them in a little olive oil with salt and pepper until soft.
Then break the eggs into a bowl and blend with a fork. Season with a bit more salt, pepper and a pinch of turmeric/ curcuma and add the leek & pepper (plus chives or basil if you have).
|Add half a teaspoon of butter to the frying pan. Then pour the egg/ leek/ pepper mix into the frying pan to cover the entire base (6 inches/ 15cm).
Roast the pine kernels lightly in a small frying pan and sprinkle over the top of the egg & vegetables.
|Fry until it sets and you can move a spatula underneath the omelette.
Make sure it doesn’t stick to the frying pan when you turn it to fry the other side.
