Who said Cake was off the books while you’re on the Candida Diet?!
OK, this carrot cake is not like traditional cake. It’s more like soda bread.
But it’s ever so moreish and comforting!
I recommend you use this sugar free carrot cake recipe as the base for baking a big loaf. Cut into smaller slices you can then easily freeze this healthy snack.
It defrosts super quickly and tastes lovely when it’s toasted – perfect as a healthy snack when you’re craving something sweet.
Cake Base Ingredients
- 150g (5oz, 1 cup) plain wholemeal flour (or Spelt or gluten free all purpose flour)
- 4 tablespoons coconut or organic sunflower oil
- 1 teaspoon bicarbonate soda
- 1 teaspoon cinnamon
- 2 organic eggs (or flax egg alternative)
- 2 medium finely grated carrot (carrots)
- 2 tablespoons fresh lemon juice (about half a small lemon)
- 1 teaspoon vanilla powder
- 1 teaspoon ground nutmeg
- 1 handful walnuts or pecan nuts
- 10-15 drops of Vanilla Stevia (this is the brand I used; US alternative here)
Cake Filling Ingredients/ Custard Creme (Optional)
- maize meal (unrefined corn flour)
- rice milk (plus a few Vanilla stevia drops if necessary)

…and ideal to take with you at birthday parties/ other celebrations so you won’t feel so bad for not eating sugary cakes & cookies…
Perhaps add a bit of stevia if you like. The cake is totally sugar and sweetener free.
Preheat the oven to Gas mark 6/ 400 F/ 200 C.
Grate the carrot, squeeze the juice of half a small lemon out and put aside. Butter a sandwich tin or small cake tin and line it with baking paper.
Combine the flour, bicarb and cinnamon/ vanilla/ nutmeg. Beat the eggs one after the other with a little flour. Add the grated carrot, oil, lemon juice and the rest of the flour to your egg mixture. You can also add some toasted walnuts/ pecan nuts now if you fancy. Depending on the carrots you are using the dough might be too moist. In that case just add a little bit more flour at this stage.
Fill the cake mixture into the lined sandwich/ cake tin and bake for 25 minutes. Test to see whether it’s done by poking a thin skewer in the centre of the cake – if it’s done it’ll come out clean with no cake sticking to it. Et voila – your sugar free carrot cake is virtually ready to eat. You can put it on a cooling rack and take it out of the tin after it has cooled down a bit.

Make double the amount and split it into 2. Add a table spoon of treacle or two table spoons of agave nectar to one of the cakes – for a slightly sweeter but still healthy and delicious carrot cake recipe that is ideal to serve to your non-dieting family and friends.
Cake Filling/ Custard Creme
To add another sweet dimension to your healthy sugar free carrot cake make a custard like creme to go with it.
Just heat up some rice milk and stir in some coarse maize meal. It will thicken up quickly so use plenty of rice milk.
General Dietary Guidance (Candida Diet info)
This healthy carrot cake is sugar free & and suitable for phase 3 of the candida diet.
Less is definitely more here. If you suffer from Candida it’s best to enjoy only a small slice.
So listen in with yourself – if you are at the beginning of the candida diet and you are still experiencing a lot of symptoms it is probably best not to eat the cake at all, sorry.
Your healing is paramount! What you can do though to minimise the likelihood of the carrot cake causing you any trouble the next day is to leave out the nuts and not have custard with it.
If you’ve been following the anti candida diet for some time and you can tolerate potatoes and soda bread – then this sugar free carrot cake recipe is the way forward. I’d try it without sweetener first (tastes more like a bread than a cake, but it’s less likely to cause you repercussions!) If you don’t react to sugar you definitely want to add some sweetener. Honey , Maple syrup or Coconut sugar would work nicely, but Vanilla Stevia and Xylitol being my first Candida diet friendly choice.
