These have got to be the easiest & quickest snack bites ever.
Just mix, chill & go!
Good with me as I’m notoriously in a rush. So here’s something sweet from me to you for Valentine’s
100% Sugar, dairy & gluten free and could therefore be an essential Candida diet dessert or guilt-free snack.
- 4 heaped tbsp coconut oil/butter
- juice of half a lemon
- 4 tbsp unsweetened desiccated coconut
- 4 drops or more stevia (I like this brand)
- optional: 1-4 tsp gelatin (I used this one) or Agar agar
- optional: silicone heart-shaped moulds (I use these ones)
- Warm the coconut oil up over a radiator or hob on low heat.
- When melted add 3 tbsp desiccated coconut and the lemon juice.
- Sweeten with stevia. I used 4 drops and it still tasted sour but the stevia taste was noticeable.
- Stir in some gut healing beef gelatin to boost your immune system.
- Pour into silicone moulds and store in the fridge for 45 mins or until they look solid and dry. You can also use a square shallow baking tray. You then would have to cut the jelly into smaller pieces. Makes 13. Best stored in the fridge.
These funny little beauties melt in your mouth into smooth coconuttiness until you are left with lemony jelly!
You can whip them up in a minute. Although you’ll have to wait a moment for the coconut oil to set.

Candida diet info: Bare in mind that coconut oil is a natural antifungal and also highly acidic.
If you eat large amounts of these jellies then you might feel a bit queasy or experience die off. I’m just saying because the jellies are very more-ish and before you know it you’ve eaten them all – which normally you wouldn’t do with the same amount of coconut butter straight from the jar…

Wow, nice little valentine goodie for the grandkids!!! On #4 when you stirred in the gelatin (I just happen to have that brand!), will it mix well easily? I’ve only used it once in a hot liquid & the recipe cautioned that it could glomp into lumps. Any tips on that in this recipe? Yippee, I’m make them tonight, how fun. I had no trouble mixing it in, no lumps. I did pour the lemon juice into the hot liquid coconut oil first, maybe that helped to keep it from lumping? Goodie goodie gosh, I am keeping my fingers crossed that they turn out alright for you 
I made them, and they are yummy. My first batch only made 5!! So then I made another batch and doubled the recipe – my mold is small flower shapes. I think my granddaughter will like these, she ate an entire meyers lemon the other day – as if it was an orange!!! We’re trying to stay away from sugar with the kids, so this is perfect. sorry you only got 5 out of it to begin with. My molds are quite shallow I guess… glad you liked them though. I could imagine they are not everyone’s cup of tea. But it’s so hard to find sugar free snacks, isn’t it. Hope you had a splendid Valentine’s day xx
