Rice Dream Smoothie

What do you do with leftover rice? You blend it ;-)  I see the puzzled look on your face. And I agree, it is somewhat weird. At least I have never heard anyone do that before.

But when you think about it, it makes total sense:

Brown rice is super nutritious, gives slow release energy that keeps you full for longer. And it even has a cleansing effect on your gut.

And with it’s lovely white colour and fond memories of rice puddings, we are onto a winning combination here.

I only thought of adding rice, when I realized that most substantial Smoothie Recipes contain oats. I love oats. But more times than not they don’t agree with me. Whereas I have never had any problems from eating brown rice – and I ate tons of that stuff in the initial stages of the Candida Diet.

This is a Smoothie to my liking – simple, lush & filling!

And healthy, too, of course.

Rice Dream Smoothie

Ingredients
  • ½ can coconut milk
  • 3-4 heaped tbsp cooked brown rice (or brown rice protein powder)
  • ½ small apple (I used Braeburn)
  • ½ cucumber
  • 1 tsp Maca powder (you could use vanilla instead)
  • sprinkle of cinnamon
  • 1 tsp coconut oil
  • a few dashes of almond milk (I used unsweetened)
  • optional: ¼ tsp spirulina and ¼ tsp chlorella)
Instructions
  1. Fill the coconut milk in your blender.
  2. Add the cooked brown rice or rice protein powder. If you opt for cooked rice and it’s already a day old then it’s best to briefly fry the rice with the coconut oil. Put aside for a few minutes to cool down again.
  3. Chop the cucumber and apple into slices or chunks and add to the coconut milk.
  4. Add the spices and a bit of almond milk.
  5. Then blend on high until everything is smooth.

yes,yes,yes! The simple things are often the best… Maybe this smoothie will get me back into cooking lots of coconut rice (well, I call it coconut rice, but really I mean cooked brown rice with coconut oil). I always used to have some ready to snack on. But somehow I don’t cook it that often any more. (Note to self: eat.more.rice!)

Deal ;-) You wait, til I’m allowed to eat fruit again properly, hah! Talking of which – my boyfriend had a moment of creativity, too, yesterday. He blended 2 handfuls of blueberries with 4 kiwis, apple, some rice milk and 2 tbsp of protein powder – very nice and incredibly frothy! I could swear it tasted of banana though.
