Teff Bread Toasties (gluten free)

  • 100g (1/2 cup)Teff flour
  • 100g (1/2 cup) Buckweat flour
  • 80g (1/4 cup) ground almonds
  • 20g (4 tblsp) coconut flour
  • ¾ tsp salt
  • ¾ tsp baking soda
  • 1 egg (1 tblsp each of chia seeds+flax seeds with water)
  • ½l warm water
  1. Preheat the oven to gas mark 6, 400 F (200C), including a rectangular baking tray.
  2. Mix the dry ingredients, then mix the egg and and add enough water to form a dough.
  3. Take the baking tray out, line it with baking paper and part the dough into equal parts. Make flat oval shapes, put a line in the middle and make tiny holes all over the breads to speed up the baking time.
  4. Bake for about 15 mins. To speed it up further you could turn them over after half the baking time.
