Avocado Caramel Pudding

- 1 ripe avocado, peeled + quartered
- 2 tbsp coconut oil
- 2 tbsp cocoa powder
- 2 tbsp raw agave nectar
- 3 dates soaked in warm water for 15 minutes and chopped
- ¼ to ½ cup almond milk
- 1 teaspoon vanilla extract or ⅓ vanilla bean
- Put all the ingredients in blender or food processor and blend until smooth. Oil first, cocoa powder and vanilla last.
- Add additional almond milk until the pudding is the consistency you want.
- Briefly roast the flaked almonds in a small fring pan over a medium heat until golden. Then chill, and top pudding with flaked almonds before serving.
