Avocado Caramel Pudding

  • 1 ripe avocado, peeled + quartered
  • 2 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 2 tbsp raw agave nectar
  • 3 dates soaked in warm water for 15 minutes and chopped
  • ¼ to ½ cup almond milk
  • 1 teaspoon vanilla extract or ⅓ vanilla bean
  1. Put all the ingredients in blender or food processor and blend until smooth. Oil first, cocoa powder and vanilla last.
  2. Add additional almond milk until the pudding is the consistency you want.
  3. Briefly roast the flaked almonds in a small fring pan over a medium heat until golden. Then chill, and top pudding with flaked almonds before serving.
