Lemon & Coconut Melty Jellies

  • 4 heaped tbsp coconut oil/butter
  • juice of half a lemon
  • 4 tbsp unsweetened desiccated coconut
  • 4 drops or more stevia (I like this brand)
  • optional: 1-4 tsp gelatin (I used this one) or Agar agar
  • optional: silicone heart-shaped moulds (I use these ones)
  1. Warm the coconut oil up over a radiator or hob on low heat.
  2. When melted add 3 tbsp desiccated coconut and the lemon juice.
  3. Sweeten with stevia. I used 4 drops and it still tasted sour but the stevia taste was noticeable.
  4. Stir in some gut healing beef gelatin to boost your immune system.
  5. Pour into silicone moulds and store in the fridge for 45 mins or until they look solid and dry. You can also use a square shallow baking tray. You then would have to cut the jelly into smaller pieces. Makes 13. Best stored in the fridge.
