Best of Vegan Mofo – Week One

vegan mofo

Here are a few highlights of the first week of Vegan Mofo – the number one place to find tasty plant-based recipes.  I had no idea how many people are actually participating. From all over the world! Hundreds if not thousands! You can see the list here.

These are my submissions this week:

roast pepper sandwich

Thyme Hummus, Grilled Pepper and Alfalfa Sprouts Sandwich – recipe here

Creamy Green Detox Soup – recipe here

Kale and Butter Beans Soup – recipe here

Cauliflower and Almond Soup – recipe here

Spicy Carrot and Coconut Soup – recipe here

You can follow my recipes submissions along on Pinterest, too – here‘s my board.

As you can see I am living quite healthy at the moment, courtesy of me taking part in Vegan Mofo, phew…

A much needed turn from my over indulgent summer, which was starting to take it’s toll. You can read about it here in my last Candida Diet Update for August, where I share how what I ate affected how I felt. If you are following the Candida diet yourself this might be interesting for you.

Next week I’ll share with you how to make Almond milk, a lovely sweet smoothie and a killer snack bread recipe… stay tuned… or even better — hop on my list to get an email with everything that has been cooking up!

The detox soup and the thyme hummus are my favorites. I’m eating healthier to this month.. Summer has been kinda lazy with lots of veg burgers, cookies and such (though I enjoyed the summer fruits and vegs). This month is more about making my own spreads for sandwiches, soup, homemade burgers, etc.

Hello Sara, how lovely of you to drop by. I’m glad you like the detox soup and thyme hummus :) thank you! I had a peek at your blog, too — is that Dutch? All I under stood was ’3 minute brownie’ and ‘cashewcreme’ ;-) Right up my street though! I’ve “like”d and followed you on Twitter and Pinterest btw…
