Coconut Flour Bread Recipe (Revised!)

Serves: 12 (yields 12 small slices)

Time for prep: 5 minutes

Baking time: 40-50 minutes

Finally a reliable Candida diet and Paleo friendly Coconut flour bread!

This is my second attempt at creating a grain free coconut bread, and it is much improved. This one is much more solid compared to the original recipe here, so you can slice it properly.

With it’s golden crust, mild yellow colour and soft crumbly texture when you bite into it the bread reminds more of a cake than a ‘regular’ sandwich bread.

But I quite like that. It makes the perfect quick snack spread with coconut oil or coconut butter with a hot cup of tea or a bowl of soup ?

Ingredients

  • 3/4 cup (96g) coconut flour
  • 3/4 cup (96g) arrow root flour
  • 1 tsp gluten free baking powder
  • 6 eggs (at room temperature otherwise they stunt the rising)
  • 3 tbsp coconut oil (warmed up if solid)
  • 1 tbsp of desiccated coconut (for sprinkling on)

optional (add some sweetness):

  • a few drops of Vanilla Stevia drops (since I’m in the UK I used this brand; also available in the US here); 5 drops gave it just a hint of sweetness
  • 1/2 tsp of Cinnamon spice

How to make it

  • Preheat oven to 350 degrees F, 180 C, Gas mark 4.
  • Grease a medium sized baking tin (9x5x3 inches) and line with parchment paper.
  • Mix wet ingredients together with a kitchen stand mixer or an egg whisk (that’s what I did).
  • Mix the baking powder with the dry ingredients (including the sweetener or salt & herbs).
  • Add the mixed dry ingredients to the wet ingredients until a spreadable dough forms, stir with a whisk or spatula until all lumps are dissolved.
  • Use a spatula to spread the bread dough into the lined baking tin, sprinkle the desiccated coconut over the top of the cake, and put it in the oven.
  • Bake at 350 degrees F, 180 C, Gas mark 4 for 40 minutes or until the outside is golden and a tooth pick inserted in the centre comes out clean. 

This bread freezes well! Bonus!

You DO need a drink to go with the bread, because of all the coconut fibre and eggs in it the bread verges on the dry side. So you need to flush it down with something. Especially if you have a tendency for constipation, ooops too much information, sorry ?

It’s true though. Eggs are a binding agent.

    • Hi Teresa, good to hear from you. Well done for losing so much weight and turning your health around so swiftly. Overcoming systemic Candida is tough, so I’m not surprised you had a relapse. I have had several over the years. But every time it happened it was less intense and I was able to recover quicker. So hopefully it will be the same for you. All my best
