I’m on a sensi-tummy baking mission. Vegan – gf-free – grain free – you name it. I’m trying it all!

Following on from last week’s vegan bread-making success, this week I wanna share with you another Teff creation. This time the name of the game is gluten free!

Teff flour is easy to get hold of. You can get it from your local health food shop or online.

I used an egg in this recipe. But you can use flax & chia seeds instead for a completely vegan bread.

And to make it even easier for you to re-create this at home, I created flat breads, rather than a big loaf of bread.

This cuts down the cooking time to 15-20 minutes max.

Making these breads is not only quick to bake, but even quicker to toast (straight from frozen – BAM).

What I liked about them (apart from the funny coffee beans shapes lol!) was the cakey flavor.

This for me turned the Teff Toasties into a perfect tea time treat with a hot cuppa!

And since they are very allergy friendly, they even make great snacks on the candida diet (after the strict no-carb phase is over that is).

Don’t let the look fool you! The toasties might look rock hard…

But they actually have a very soft texture – More like a cake than a bread!

Teff Bread Toasties (gluten free)

 

Ingredients

  • 100g (1/2 cup)Teff flour
  • 100g (1/2 cup) Buckweat flour
  • 80g (1/4 cup) ground almonds
  • 20g (4 tblsp) coconut flour
  • ¾ tsp salt
  • ¾ tsp baking soda
  • 1 egg (1 tblsp each of chia seeds+flax seeds with water)
  • ½l warm water

Instructions

  • Preheat the oven to gas mark 6, 400 F (200C), including a rectangular baking tray.
  • Mix the dry ingredients, then mix the egg and and add enough water to form a dough.
  • Take the baking tray out, line it with baking paper and part the dough into equal parts. Make flat oval shapes, put a line in the middle and make tiny holes all over the breads to speed up the baking time.
  • Bake for about 15 mins. To speed it up further you could turn them over after half the baking time.

How do the Teff Bread Toasties compare to their vegan brother?

Very similar in texture and taste. The vegan version perhaps had a slightly more earthy flavor, due to the chia seeds. But not unpleasant in any way.

The dough was easy to shape even though I used only one egg to bind the ingredients together. I presume the addition of more eggs would make the bread rise more and make it even fluffier.

But then you’d really call it a Teff “cake”, wouldn’t you ?
